– 1 teaspoon whole black peppercorns
– 1 teaspoon whole cloves
– 1 teaspoon whole allspice
– 1 teaspoon whole cinnamon
– 1 teaspoon whole bay leaves
– 1/2 cup cooking oil (for frying)

Instructions:

1. Begin by preparing the pork leg. Remove any excess fat and skin, leaving a thin layer of fat on the meat. Score the skin by making shallow cuts with a knife, ensuring not to cut through the meat.

2. In a large pot, combine the soy sauce, vinegar, brown sugar, water, peppercorns, garlic, black peppercorns, cloves, allspice, cinnamon, and bay leaves. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes.
